Orange Sponge Cake Recipe

Use this recipe to make a “spongy”, fluffy circular cake that everyone may enjoy.

Ingredients (For 8 Slices):

  • 100 grams cake flour
  • 2 grams cream of tartar
  • 60 grams vegetable oil
  • 60 grams orange juice
  • 70 grams refined sugar
  • 5 eggs at room temperature
  • Extra vegetable oil, canola oil, or cooking spray
  • Boiling water
  • Optional: whipped cream, sprinkles, jam, and other toppings of your choice
  1. Prepare two large, dry bowls ahead of time, an 8 inch circular baking pan, and two larger pans.
  2. Preheat oven to 300 degrees Celsius.
  3. Put the cake flour in a bowl, along with the juice and oil.
  4. Crack all 5 eggs individually. Let the yolks go in the bowl full of flour and the whites in another bowl. Mix the yolk immediately before cracking the second egg and so on. If you can draw an 8 in the batter (dip stick in batter, raise and move in 8-like motion), it is ready.
  5. Mix the sugar, egg whites, and cream of tartar in the second bowl. Stop when mixture is creamy, or when you dip something in the mixture there is a small “upside down fish hook”.
  6. Transfer two batches of the second bowl’s moisture using a spatula. Mix well, until the batter is light yellow.
  7. Pour all contents of the batter-filled bowl into the second bowl. Fold the mixture, DO NOT MIX.
  8. Grease prepared baking pan with a light layer of vegetable or canola oil or cooking spray. Pour batter in pan. Lift off the working surface about 1 centimeter and drop. Repeat until many tiny bubbles form.
  9. Fill one larger pan with boiling water. Put in third rack of heated oven. Put the cake tin with the batter in the second and another large pan in the first rack. Set the oven cook time to 1 hour and bake.
  10. When done, let cool for a few hours on a rack. If desired, slice cake in half and spread jam over, then replace top or decorate cooled cake with toppings of your choice. Serve cold and enjoy!

Note: You don’t always need to use orange juice, literally any drinkable liquid (maybe except for water) will work. Also try baking in cupcake cups and different shaped cake pans.
